Monday Morning Magic: The Pineapple Mojito Smoothie
Last summer I had my first mojito. My awesome boyfriend introduced me to them, and I became a fan pretty quickly. Our mojitos were a little unorthodox because we never used simple syrup, instead opting for other sweeteners like stevia, coconut sugar, fresh pineapple, and watermelon.There was always lots of fresh mint, and a healthy dose of lime. As the weather warms, I’m in the mood for mojitos again. But this morning I though hey, why limit the delicious mint-lime-pineapple combo to just Mojitos? And the Pineapple Mojito Smoothie was born.

Pineapple Mojito Smoothie
Serves 1, generously, or 2, appropriately
- 3/4 cup fresh pineapple
- 7 large, fresh mint leaves
- 2 big handfuls of power greens blend (baby chard, baby spinach, and baby kale)
- 1/4 avocado
- 2 limes, juiced
- 1 tbsp unsweetened, shredded coconut
- 6-8 ice cubes
- 1/2-1 cup water, as needed
Add everything except the ice into your blender. Blend until everything is combined, and then add the ice. Continue to blend until completely smooth. Pour into a massive glass, and enjoy!
